This decadent dessert is pure bliss, whether you serve it hot or cold!!
Lemon meringue pie has been lived and loved since the 19th century when meringue was at its peak for perfection. It’s essentially a kind of lemon curd (always remember: home-made is the best-made!) on a lovely pastry, topped with a stiff but glossy meringue!
STEP 1: Make the pastry
… And though it may seem a tad challenging, it really isn’t. In fact rolling out the pastry is the best part; once it’s all cooked you’ll get a warm tingly satisfaction, your head chanting, “Ohh yeah, I did that” *grin*.
STEP 2: (Pretending we’ve already filled with curd) BAKE!
